Southern American cuisine is filled with delicious recipes that, while not always good for the body, are certainly good for the soul. Unfortunately, those who are unable to have gluten for whatever reason often feel as though they are unable to enjoy these delicious foods. Why? Most of the delicious soul food recipes from the American south are filled with gluten. Here we have come up with a few southern inspired gluten free recipes that will have your mouth watering!

Fried Chicken

You can create gluten-free fried chicken one of two ways. The first is to simply purchase gluten-free bread crumbs. The second is to use cheerios, which are gluten free. To use cheerios, place some in a zip lock bag and use a rolling pin to create crumbs. Season with salt, pepper, paprika, parsley, garlic powder, and onion powder. If you enjoy a kick to your fried chicken, you can also add a sprinkling of ground red pepper flakes. 

Using drum sticks or thinly sliced breast strips, dip the chicken into cornstarch. Then dip into an egg/milk batter, and finally fully coat with your chosen breading. Fry in a cast iron skillet on medium heat until brown – about six to ten minutes for each side, depending on the thickness of your chicken. Serve with mashed potatoes and your favorite vegetable.

Red Beans & Rice with Grilled Cajun Salmon

This meal is naturally gluten free, just be sure to check your seasonings! To make the salmon, create a Cajun seasoning mixture by combining 2 tablespoons of corn starch with 1 tablespoon salt, and 1 teaspoon of each black pepper, ground cayenne pepper, onion powder, garlic powder, paprika, red pepper flakes, and oregano. Coat your salmon in this, and fry in a cast iron skillet over medium heat until done.

Throw your rice on to boil while you make the red beans. One cup of rice to two cups of water should be plenty. Chop half a cup each of red onion, green bell pepper, and red bell pepper. Add this to a skillet on medium-high heat and cook until soft.

Once soft, add in two cans of red beans. Season with salt, pepper, and onion powder to taste. Add a dash or two of hot sauce for a kick. Once finished, mix the red beans into the rice. Serve the salmon over top the red beans and rice with a lemon wedge for the fish.
